Fried Egg in Avocado
Perfect for a nutritious breakfast or brunch!
Ingredients:
- 1 ripe but firm avocado.
- 2 small eggs.
- Salt and pepper to taste.
- Optional: paprika, chili flakes or fresh herbs such as chives or parsley.
Preparation:
- Preheat the oven to 200°C.
- Prepare the avocado: Halve the avocado and remove the pit. If necessary, spoon out a small amount of flesh from the center, leaving enough room for the egg.
- Fill the avocado with egg: Place the avocado halves in a baking dish so that they are stable. Crack an egg over each half, and gently slide the egg into the cavity of the avocado. If necessary, use only the yolk and a little of the egg white if the egg is large.
- Seasoning: Sprinkle salt, pepper and possibly some paprika or chili flakes over the egg.
- Baking: place the baking dish in the preheated oven and bake the avocados for about 12-15 minutes, or until the egg white is solidified but the yolk is still soft.
- Finish: Remove the avocados from the oven and garnish with fresh herbs such as chives or parsley.
Serve immediately and enjoy the creamy avocado with a soft fried egg inside!
