Avocapancakes!

 

You can make pancakes with different mashed fruits like banana and pumpkin. You can do this with avocado too :). Here are the ingredients and how to prepare them. 

 

With these ingredients, you will have enough for 2 people.

 

Ingredients:

  • 1 ripe avocado
  • 200 ml milk or buttermilk
  • 1 egg
  • 100 g oat flour or flour 
  • 1 teaspoon baking powder
  • Optional: half a lemon (juice and rind)
  • (Coconut) oil for baking
  • Pinch of salt
  • 1 tablespoon honey or maple syrup
  • Optional: handful of blueberries

 

Preparation:

  1. Puree the avocado (easily with a fork, hand blender or blender). 
  2. Add the flour, milk, egg, baking powder, juice and zest of the lemon and salt. Mix to make a smooth batter. The batter is firm, which is ok ;). 
  3. Heat some (coconut) oil in a frying pan and spoon 3 (gravy) spoonfuls of batter (for not too big pancakes) into the pan. Fry them gently brown on both sides. Let them cook well on one side, waiting until bubbles appear, before flipping them. 
  4. The pancakes taste delicious with honey or maple syrup. 
  5. Serve with some blueberries on the side, if desired.
