New Spanish recipe: Avocazpacho!

Recipe Avocazpacho

Spanish avocadosoup.

Super simple to make and delicious both hot and cold.

Ingredients:

  • 2 ripe Spanish avocados Lamb Hass and/or Bacon from Avocadoptie
  • 1 cucumber, peeled and diced
  • 1 clove of garlic, finely chopped
  • 2 cups vegetable broth
  • Juice of 1 lime
  • Salt and pepper to flavour
  • Fresh herbs (e.g. coriander) for garnish (not necessary!)

Instructions:

  1. Peel and stone the avocados and put them in a blender.
  2. Add the cucumber, garlic, vegetable stock and lime juice.
  3. Blend everything until smooth.
  4. Season with salt and pepper.
  5. Eat warm or put the avocazpacho in the fridge to cool. Cool, the avocazpacho might be even tastier ;)
  6. Serve the (cold) avocazpacho (avocado soup) with fresh herbs of your choice as garnish.
