It's summer! Avocadoptie trees are full of baby avocados. Our avocados are pickable and edible from December onwards. All other months, we too eat avocados from other avocado plantations, not nearly as tasty of course ;), considering the road they have travelled and the treatments involved.
Avocados are also a delicious addition in and with our food in summer. Therefore, this deliciously fresh summer recipe for an avocado mango salsa. It is healthy and easy to make. Perfect for a summer picnic, barbecue or light meal.
Avocado Mango Salsa
Serving Suggestions:
- With tortilla chips: Use the salsa as a dip for tortilla chips.
- On tacos: Add a spoonful of salsa to tacos for extra flavour and freshness.
- With grilled dishes: Use the salsa as a topping for grilled chicken, fish or prawns.
Ingredients:
- 2 ripe avocados, sliced into cubes
- 1 large mango, chopped into cubes
- 1 red pepper, finely chopped
- 1/2 red onion, finely chopped
- 1 jalapeño, seeds removed and finely chopped (optional, for some extra spice)
- Handful of fresh coriander, finely chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- Preparing the ingredients: Cut the avocados, mango, pepper, red onion and jalapeño into small cubes.
- Mix: Place the sliced avocado, mango, pepper, red onion, jalapeño and coriander in a large bowl.
- Adding lime juice: Squeeze the juice of the lime over the ingredients and mix gently to distribute the flavours well.
- Season: Add salt and pepper to taste and mix gently again.
- Serve: Serve the salsa immediately or let it rest for a while in the fridge to allow the flavours to mix well. It is delicious as a side dish, dip or as a topping for grilled fish or chicken.
